Method
- Chill the glasses; scoop the gelato into them and return to the freezer while the espresso brews.
- Pull the espresso at the last possible second.
- Pour the hot shots directly over the cold scoops AT THE TABLE: the name means 'drowned,' and the drowning is the ceremony.
- Eat immediately with the spoon, chasing the moving border where espresso melts gelato into cream, then drink the end like the coffee it has become. Total elapsed time: four minutes. Total regret: zero.
