Ingredients

  • 700 g aubergine, in 3 cm chunks
  • 400 g waxy potatoes, in 3 cm chunks
  • 400 g red and green peppers, in wide strips
  • 300 g onions, sliced
  • 500 g ripe tomatoes, chopped
  • 120 ml sunflower oil
  • 6 garlic cloves
  • 1 red chilli, chopped
  • 3 g ground blue fenugreek (utskho suneli)
  • 3 g ground dried marigold (kviteli kvavili)
  • 30 g coriander leaf
  • 15 g flat parsley
  • 10 g summer savory or basil
  • 20 ml red wine vinegar
  • 10 g salt

Method

  1. Fry the potato in the oil over medium heat until the edges are gold and a knife still meets slight resistance in the middle, then lift it out.
  2. Fry the aubergine in the same oil, hot and in one layer, until browned and slumped, then the peppers until their skins blister and go slack.
  3. Return everything to the pan with the onions, add the tomatoes and salt, cover and cook until the tomatoes have collapsed into a sauce and the potato gives completely, about 15 minutes. 15 min
  4. Pound the garlic, chilli, blue fenugreek and marigold with a pinch of salt, stir it in with the vinegar and lift the pan off the heat at once.
  5. Fold in the herbs, put the lid back on for 10 minutes, and serve warm or at room temperature rather than straight from the stove. 10 min

Where it goes wrong A starchy ingredient met a high-speed blade, so the cells burst and released their starch: what should be light comes out as an elastic glue that lifts off the spoon in one mass.
