  • 1kg peaches, sliced
  • 150g sugar
  • 1 tbsp cornstarch
  • 1 tsp cinnamon
  • 100g pecans, chopped
  • For the topping: 190g flour, 100g sugar, 2 tsp baking powder, 1/2 tsp salt, 115g butter melted, 180ml milk

Method

  1. Toss the peaches with sugar, cornstarch, and cinnamon and spread in a buttered dish.
  2. Whisk the topping ingredients into a batter and spoon it over the fruit in patches.
  3. Scatter the pecans over the top.
  4. Bake at 190C for 45-50 min until the topping is gold and the fruit bubbles. 50 min
