Appalachian Apple Stack Cake

Ingredients

  • Dried apples: 300g, simmered in water 45 min with ½ tsp cinnamon, cloves and allspice, then mashed to a thick, dark butter. Fresh apples are the wrong flavor; dried is the identity
  • Cake layers: 350g flour, 150g sugar, 120g butter, 120ml sorghum or molasses, 1 egg, 120ml buttermilk, 1 tsp soda, ginger
  • 5–7 THIN layers, baked in a skillet or cake pans: more crust than crumb, closer to soft gingerbread cookies
  • Patience: assembled, wrapped, and RESTED 2 days minimum
  • Only a dusting of powdered sugar on serving day, no icing; the apples are the frosting

Method

  1. Simmer and mash the dried apples with spices to a spreadable dark butter; cool.
  2. Make a stiff sorghum dough; divide in 6; pat each thin into a greased skillet and bake 180°C, 10–12 min: the layers come out firm and unpromising; trust the process. 12 min
  3. Stack: layer, thick apple spread, layer, until crowned; wrap the whole cake tight.
  4. Refrigerate 2–3 DAYS: the apple butter migrates and the firm layers soften into velvet. Dust and slice thin: it is richer than it admits.
