Apple Cider Donuts

Ingredients
- 500ml apple cider, boiled down to 120ml and cooled
- 375g flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 100g sugar
- 55g butter, melted
- 2 eggs
- 120ml buttermilk
- Neutral oil for frying
- For coating: 200g sugar with 2 tbsp cinnamon

Method
- Boil the cider until reduced to a scant half cup: this is where the apple flavor lives. Cool it.
- Whisk the dry ingredients. Separately whisk sugar, butter, eggs, buttermilk, and the cider reduction.
- Combine gently into a soft, sticky dough. Chill 1 hour, then roll on a floured board to 1.5cm and cut. 60 min
- Fry at 175C for 90 seconds a side until deep gold. Drain briefly.
- Toss in cinnamon sugar while still hot.
