- 2 tomatoes, diced
- 1/2 onion, diced
- 2 jalapenos, minced
- 3 tbsp olive oil
- 2 tbsp lime juice
- 100g queso fresco, crumbled

Method
- Boil the diced nopales in salted water 10-15 min until tender; they release a sticky liquid, so rinse well after draining. 15 min
- Combine the cooled nopales with the tomato, onion, and jalapeno.
- Dress with olive oil, lime, salt, and pepper.
- Fold in the cilantro.
- Top with crumbled queso fresco and serve cool.
