Ingredients
- 4 pieces young cod or haddock, about 180g each
- 100g cracker crumbs (Ritz style)
- 55g butter, melted
- 2 tbsp lemon juice
- 1 tbsp parsley, chopped
- 1/2 tsp paprika
- Salt and pepper
- Lemon wedges

Method
- Pat the fish dry, season, and lay in a buttered baking dish.
- Toss the cracker crumbs with the melted butter, parsley, and paprika.
- Squeeze lemon over the fish and pack the crumb mixture on top.
- Bake at 200C for 12-15 min until the crumbs are gold and the fish flakes at the thickest point. 15 min
- Serve at once with lemon wedges.
