- 1kg floury potatoes, 100g butter, 100ml hot milk
- Onion gravy: 3 onions, sliced; 1 tbsp flour; 400ml beef stock
- Splash of Worcestershire, tsp of mustard
- Peas, if your heart says so

Method
- Fry sausages LOW and slow, 20–25 min, turning often: never prick them. 25 min
- Meanwhile melt onions in butter 20 min to deep gold; flour in; stock gradually to a glossy gravy. 20 min
- Mash: rice or mash the potatoes dry, then beat in butter first, hot milk second.
- Mash in a wave, bangers at anchor, gravy over everything.
