  • Sour cream, dill; uszka dumplings if it is Christmas

Method

  1. Simmer beets and aromatics in stock 40 min. 40 min
  2. Strain for clear barszcz (Polish, ruby consommé) or blend for the thick road.
  3. Balance sharply: vinegar and sugar until it bites and hums.
  4. Serve with sour cream and dill, or crystal-clear with tiny mushroom uszka.

How it should come out

  • Deep luminous garnet; a spoonful held to the light reads red-purple, not brick, brown or dusty pink.
  • The strained version is genuinely clear: light passes through the bowl with no cloud or sediment; the blended version is uniformly smooth with no fibrous beet threads.
  • Nothing rides the surface and nothing strays into the bowl: no fat beads, no scum, no loose allspice berry or bay fragment; the only solids present are the ones put there deliberately.
  • Hot enough to steam but off the boil: a spoon of sour cream stirred through blends to an even pink without curdling into flecks or beading at the rim.
  • Sour first and hard enough to tighten the jaw, sugar arriving a beat behind to round it, salt last; if the first spoon reads sweet earth before it reads sour, it is not barszcz yet.

Where it goes wrong The vinegar went in early and the pot kept boiling, so the soup arrives a dull brownish brick with the sourness cooked flat, tasting merely of sweet earth.
