  • Filling: 80g black sesame seeds, toasted and ground + 60g sugar + 60g softened butter or lard, chilled until scoopable
  • Dough: 200g glutinous rice flour + ~160ml warm water
  • A knob of cooked dough (boil a small piece 1 min and knead it back in, the elasticity secret)
  • Ginger syrup: 1L water, 80g sliced ginger, 100g brown sugar or rock sugar, simmered 15 min
  • A slotted spoon and someone to share the bowl

Method

  1. Mix the filling; chill firm; roll into 16 small balls.
  2. Warm-water dough, soft as an earlobe; knead in the cooked-dough piece: it makes the wrapper stretchy and crack-proof.
  3. Wrap each filling ball, rolling smooth between palms: no seams, no cracks; cracks leak in the pot.
  4. Boil in water until they float + 2 min; transfer into the warm ginger syrup and serve them swimming. 2 min

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • It went cold before it was handled any further, and it went in spread flat and covered rather than as a warm mass that insulates its own centre.
  • It is cold through rather than cold at the edge: tested at the middle it is as firm as it is at the rim.
  • It holds its shape unsupported; it can be cut, portioned, rolled or lifted without slumping, tearing, or sticking to the hands.
  • The fat in it has gone solid: it feels firm and waxy to the fingers rather than greasy and yielding.
  • It survives the step it was chilled for, going into heat or a coating or a mould still holding its form rather than collapsing the moment it is touched.

Where it goes wrong It was given twenty minutes instead of the hours it needed, so it is firm at the rim and soft at the core: it slumps out of shape as it is portioned, and everything made from it spreads or breaks apart in the pan.

  • A single layer on dry metal with nothing added: no fat, and nothing else sharing the pan or the tray and competing for the heat.
  • It is kept moving: shaken, stirred, or turned. Anything left still scorches on the face touching the metal while the rest of it is barely warm.
  • It is judged by smell before sight: once it is fragrant there are seconds left, not minutes, and the nose reaches that point well before the colour does.
  • It leaves the pan the instant it is done, onto a cold surface. A hot pan keeps toasting whatever stays in it, and carryover here is the difference between done and ruined.
  • The colour is even and light rather than patchy, with nothing black at the edges: one scorched piece taints the whole quantity it is ground into.

Where it goes wrong It was left alone for a moment while something else was attended to. Dry heat has no margin: the pieces against the metal go from fragrant to acrid inside a minute, and the bitterness cannot be picked back out of a ground mixture.
