Method

  1. Boil the potatoes in salted water until just tender, peel them while warm, then leave them uncovered in the fridge overnight so the surfaces dry out.
  2. Melt the sugar alone in a wide cold frying pan over medium heat, without stirring, tilting the pan, until it runs pale amber and smells of toast.
  3. Take the pan off the heat and whisk in the butter; it will hiss and thicken to a loose caramel.
  4. Add the cold dry potatoes and roll them over the heat continuously for 5 to 8 minutes, until each wears an even glossy coat that turns tacky as it cools. 8 min

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • Nothing is stirred once it is boiling, and any crystals clinging to the side of the pan are brushed down rather than left to fall in.
  • Judged by temperature or by a tested stage rather than by time: consecutive stages are a few degrees apart and look identical in the pan.
  • Colour is read off the heat and in good light, remembering that sugar keeps darkening after the flame is out.
  • Stopped decisively at the point wanted: off the heat and into the next liquid or onto a cold surface, rather than left to coast in a hot pan.
  • The result is clear and smooth rather than grainy, cloudy, or seized into a solid mass.

Where it goes wrong It was stirred after coming to the boil, or a stray crystal from the side of the pan fell back in. One crystal seeds the whole pan and the syrup turns grainy within seconds, and once sugar has crystallised the only cure is more water and starting the whole thing again.

  • The water was salted before anything went in, and tasting it confirms it: seasoned on the tongue, with the salt dissolved rather than sitting on the pot floor.
  • There is enough water, hot enough, that the pot returns to its boil quickly after the food goes in and never stops moving.
  • Where the dish uses the float as its signal, the signal is obeyed: the pieces rise and they come out then, not several minutes later once something else was finished.
  • Nothing is stuck to the bottom of the pot or welded to itself, and the water has not thickened into a cloudy sludge.
  • Drained on a bite rather than on the clock: resistance at the centre, with no chalky raw core.

Where it goes wrong The pot was too small and the water unsalted, so it never recovered its boil: the food sat in slack water, went gummy at the surface, and comes out bland in a way that no sauce afterwards can fix.
