Method

  1. Simmer potatoes, onion, garlic in the water until collapsing; blend smooth with half the oil.
  2. Fry the chouriço coins; keep them and their paprika-stained oil.
  3. Drop the green ribbons into the simmering purée for 3–4 minutes ONLY: they must stay bright and slightly resistant. 4 min
  4. Serve with chouriço and its oil floated on top, and the rest of the olive oil poured with confidence.
