- 500g ground beef + 250g ground lamb (Sarajevo leans beef; the mix is the diaspora consensus), 20% fat, ground fine
- 4 garlic cloves grated to paste; 1 tsp salt; ½ tsp baking soda dissolved in 3 tbsp sparkling water, the bounce secret
- NO breadcrumbs, NO egg: ćevapi bind by kneading alone
- Lepinja or somun flatbread (a sturdy pita stands in), split and warmed IN the meat drippings

Method
- Knead the meat with garlic, salt and the soda water 5 full minutes until sticky and pale: the knead builds the spring; rest overnight in the fridge (non-negotiable; the texture forms in the cold).
- Roll into finger-sized cylinders, uniform as soldiers.
- Grill over hot coals 8–10 min, rolling for even char: they should blister outside and stay juicy-bouncy within. 10 min
- Steam-warm the split lepinja over the grill (dragged through drippings if the fire allows); pack 5–10 ćevapi inside with a snowdrift of raw onion; kajmak and ajvar alongside. Count is ordered by number; ten is a statement.
How to tell it is going right
This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

- Cooled quickly before it went in (spread out, decanted, or stood in cold water) rather than carried to the fridge hot in the pot it was cooked in.
- Protected from the rest of the fridge once cold: covered, or given space where nothing strong is sitting beside it. A rest this long is long enough to take on whatever it shares the shelf with, and some dishes want the open air.
- Given the whole time. This is the one technique whose entire content is waiting, and cutting it short leaves the dish exactly as it was when it went in.
- Brought back deliberately: reheated gently, or brought up to the temperature it is meant to be eaten at, rather than served straight out of the cold because it is late.
- Tasted and corrected AFTER the rest. Seasoning and brightness both flatten in the cold, so the dish is finished at the end of the wait rather than at the start of it.
Where it goes wrong It went into the fridge hot and covered. It held its own heat for hours in the range where food spoils, and the lid sweated and dripped back into it all night: what comes out is duller and wetter than what went in, which is the exact opposite of the point.

- The fire was ready before the food was: coals evenly covered in grey ash with no flames licking through and no raw smoke coming off, and a hot zone and a cooler one both available.
- The grate was hot and clean when the food landed, and the food released cleanly from it when the time came to turn rather than tearing away.
- Marks are browned, not burnt: deep colour where the metal touched, with no carbon flaking off and no soot transferred onto the food.
- The interior reaches its target with a thin gradient, not charred outside and cold within, and not driven through by a flare-up.
- What comes off the fire smells of fire and food only: no raw wood smoke, no fuel, nothing acrid at the back of the nose.
Where it goes wrong It went on over live flames instead of settled coals, so the outside charred bitter in the flare-ups while the middle stayed cold, and everything on the plate tastes of soot.
