Method
- Lay the chicken skin down in a dry, wide, heavy pan over medium heat and leave it alone until it sits in a pool of its own fat and the skin is deep brown, about 12 minutes, then turn and colour the second side. 12 min
- Add the onions and salt to that rendered fat, lower the heat, cover, and cook until they collapse to pale gold with no crunch anywhere, about 15 minutes, scraping the brown film off the base as they give up water. 15 min
- Only now add the tomatoes, and simmer uncovered until they no longer taste raw and a spoon dragged across the base leaves a track that fills back slowly.
