Method
- Boil potatoes; drain and steam-dry in the pot.
- Simmer scallions in the milk 3 min: the milk turns green-sweet. 3 min
- Mash potatoes; beat in the scallion milk and half the butter till fluffy.
- Mound, crater, remaining butter in the crater. Eat from the outside in.

Where it goes wrong The lid was loose or dripping and the condensate fell back onto the food, so it arrives waterlogged and pale with its seasoning washed down into the bottom of the dish.
