Method
- Bring the water, milk and the white of the spring onion to the point where the surface shivers and a ring of small bubbles clings to the edge of the pan; do not let it roll.
- Slide the eggs in one at a time, spaced apart, and leave them untouched until the whites are opaque and the yolks still wobble under the back of a spoon, about 3 minutes. 3 min
- Lift each egg into a bowl already holding torn bread and crumbled cheese.
- Salt the broth off the heat, stir in the cilantro and the green of the onion, and pour it over so the bread softens but keeps its edges.
