Method
- Beat the compound butter smooth; the parmesan mix stands separate.
- Oysters over the hottest part of the grill; a generous spoon of butter onto each: it will melt, pool, and overflow into the fire; the FLAMES licking the shells are seasoning, not accident.
- Cheese over each as the butter bubbles; lid down 2–3 min until the edges of the oysters curl and the cheese freckles. 3 min
- Off with tongs (the shells hold heat like grudges); more bread than seems dignified. The post-oyster ritual: bread wiped through each empty shell.

- The fire was ready before the food was: coals evenly covered in grey ash with no flames licking through and no raw smoke coming off, and a hot zone and a cooler one both available.
