Method

  1. Char poblanos until fully blackened; steam in a bag, peel, slit, seed carefully.
  2. Stuff with cheese; seal with a toothpick; dust with flour.
  3. Whip whites to soft peaks, fold in yolks; coat chilies in this capeado.
  4. Fry in 180°C oil, basting the top, until puffed gold. Serve in warm salsa.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • The surface met the fiercest heat available (flame, a broiler, or bare hot metal) with nothing between them, and it shows as true blistering and blackening rather than gentle, even browning.
  • The char matches the surface’s fate: where it will be eaten, black sits in patches over deep colour with every face having had its turn, and where the skin is to be peeled away, it may go to an even black, because the char there works on the flesh below and then leaves with the skin.
  • It smells of smoke and toasted surface with no acrid edge that stings the nose: acrid means it went past, and acrid does not cook out.
  • Just under the char it is cooked (softened, steaming, collapsed, or puffed, whichever the dish wants) because the flame did the surface and the trapped heat did the rest.
  • A taste carries the smoke without mouthfuls of ash: the black that flakes away is a seasoning, not a layer.

Where it goes wrong It was left on one face too long or held too close, so one side carbonised to ash while the rest stayed raw, and the smell turned acrid, which follows the dish through every later step and cannot be seasoned away.

  • Bowl and whisk are clean and dry with no trace of fat or yolk. Grease prevents the foam outright, and there is no recovering a bowl that had it partway through.
  • The sugar went in gradually once the whites were already foaming, rather than all at once at the start.
  • No grit: a little rubbed between finger and thumb feels smooth, so the sugar has dissolved into the foam rather than sitting in it.
  • Stiff peaks means the tip stands with a slight bow when the whisk lifts, and the bowl can be tipped without the mass moving in it.
  • Glossy and smooth rather than chalky or dull, with no liquid gathering underneath it in the bowl.

Where it goes wrong It was whipped past stiff peaks. A minute beyond glory the protein network tightens and tears, the foam turns grainy and matte, water weeps out beneath it, and folding that into anything gives a mixture that collapses on the way to the oven.
