Method

  1. Break the raw beef into the water in a cold pot and mash it very fine: never brown it first; the boiling is what gives the smooth texture.
  2. Add the grated onion, all the spices, cloves, bay, vinegar, and tomato paste.
  3. Simmer uncovered 1.5-2 hours, stirring, until dark and slightly thickened but still loose. 120 min
  4. Cook the spaghetti and lay it on plates.
  5. Ladle the chili over for a two-way; add beans and onions for a three or four-way, and always bury it under a mound of fine-grated cheddar.

This dish has no standard of its own yet. It is judged on the technique it exercises: checked at the pan, while there is still something to be done about it.
