Method
- Break the raw beef into the water in a cold pot and mash it very fine: never brown it first; the boiling is what gives the smooth texture.
- Add the grated onion, all the spices, cloves, bay, vinegar, and tomato paste.
- Simmer uncovered 1.5-2 hours, stirring, until dark and slightly thickened but still loose. 120 min
- Cook the spaghetti and lay it on plates.
- Ladle the chili over for a two-way; add beans and onions for a three or four-way, and always bury it under a mound of fine-grated cheddar.
