- 100g cheddar, grated
- 3 tbsp butter

Method
- Saute the ham, green pepper, and onion in a little butter until softened and lightly browned.
- Beat the eggs with salt and pepper.
- Melt butter in an omelette pan, pour in the eggs, and let them set at the edges.
- Add the ham and vegetable mixture and the cheese to one half.
- Fold over, slide onto a plate, and serve with toast.
