Cracked Dungeness Crab with Drawn Butter

  • 150g salt for the pot
  • 2 lemons, halved
  • 2 bay leaves
  • 225g butter
  • 2 garlic cloves, smashed
  • Sourdough bread and a green salad to serve

Method

  1. Bring a very large pot of heavily salted water to a rolling boil with the lemon and bay.
  2. Cook the crabs 12-15 min until the shells turn bright orange-red; lift out and cool briefly. 15 min
  3. Clean the crabs: lift the top shell, remove the gills and viscera, and rinse.
  4. Crack the legs and body with a mallet or the back of a heavy knife.
  5. Melt the butter gently with the garlic, skim it clear, and serve alongside with bread.

This dish has no standard of its own yet. It is judged on the technique it exercises: checked at the pan, while there is still something to be done about it.

  • The water was salted before anything went in, and tasting it confirms it: seasoned on the tongue, with the salt dissolved rather than sitting on the pot floor.
  • There is enough water, hot enough, that the pot returns to its boil quickly after the food goes in and never stops moving.

Where it goes wrong The pot was too small and the water unsalted, so it never recovered its boil: the food sat in slack water, went gummy at the surface, and comes out bland in a way that no sauce afterwards can fix.
