Method
- Fry or bake the potatoes until deeply crisp: soft fries collapse under gravy.
- Make a brown roux with the butter and flour, cooking it to the color of peanut butter.
- Whisk in the stock gradually and simmer to a pourable gravy. Season with Worcestershire, salt, and pepper.
- Pile the hot fries in an ovenproof dish, scatter the mozzarella over, and grill until melted.
- Ladle the gravy over and serve immediately, at any hour after midnight.
