Method
- Blanch the slab from cold water for 5 minutes, lift it when the foam stops rising, cool it, then cut 5 cm squares and tie each one in a cross with string so the fat cannot slide off the skin. 5 min
- Build a close raft of whole spring onions and ginger across the base of a clay pot and sit the squares on it skin down, so no pork touches the pot itself.
- Pour in the wine, both soys and the rock sugar, lid on, and hold at the barest tremble for 90 minutes until a skewer goes through the skin without catching. 90 min
- Turn every square skin up, lift them into individual bowls with a ladle of the braising liquid, and steam hard for 30 minutes until the fat is translucent amber and the square shivers when you knock the bowl. 30 min
- Reduce what is left in the pot to a syrup that ribbons off the ladle and spoon it over each square.
How to tell it is going right
This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.
Blanching & shocking 76 recipes
- A large volume at a hard rolling boil, and enough of it that adding the food barely interrupts it; a pot that goes quiet has started stewing rather than blanching.
- Timed rather than watched, and short. This is an interruption in the cooking of something, not the cooking of it.
- The ice bath was made and standing beside the pot BEFORE anything went into the water, not started once the timer went off.
- It went straight into the ice water, fully submerged, and stayed until cold at the centre: a piece still warm inside is still cooking, and the arrest has not happened yet.
- Drained and dried afterwards rather than left sitting in water, so it does not carry that water into whatever it meets next.
Where it goes wrong The ice bath was not ready, so the food sat draining in a colander while its own residual heat carried on cooking it. By the time it cooled it was a stage past where it was pulled, and exact arrest is the entire reason for blanching rather than simply boiling.

- Steam was running before the food went in: the water at a rolling boil and vapour coming steadily through the basket, rather than the whole thing warming up together.
- Nothing touches the water at any point: the food sits clear of it throughout, and the level neither drops enough to boil dry nor rises enough to wet it.
- The lid stayed on. Every lift costs the chamber its heat, and the number of lifts should be as close to none as the dish allows.
- Lifted out, the surface is glossy and plump with its colour heightened rather than dulled: greens brighter than they went in, not olive.
- Cooked through with the shape intact: it yields at the centre without having slumped or split, and there is no more than a spoonful of clean condensate beneath it.
Where it goes wrong The lid was loose or dripping and the condensate fell back onto the food, so it arrives waterlogged and pale with its seasoning washed down into the bottom of the dish.
