Ingredients
- 500g flour; 14g yeast; 200ml warm milk; 100g sugar; 1 egg
- 250g butter IN the dough, plus 100g melted for after; stollen is a butter delivery system with raisins
- 300g raisins + 60g candied orange and lemon peel + 60g almonds, soaked overnight in 80ml rum
- Zest of a lemon, cardamom, mace, vanilla; 150g marzipan rolled into a log for the center (the Marzipanstollen faction: join it)
- Icing sugar for the burial, two full coats

Method
- Rich yeasted dough; knead well; rise 1 h. Work in the drained rum fruit gently (wet fruit tears the gluten). 60 min
- Roll an oval; lay the marzipan log off-center; fold the dough over in the signature hump: the shape represents the swaddled child and is older than the recipe.
- Proof 45 min; bake 170°C, 50–60 min to deep gold; the loaf will be heavy and unglamorous. Trust it. 45 min
- THE RITUAL: brush the hot loaf with all the melted butter until it drinks every drop; bury in icing sugar; cool; sugar again. Wrap and REST 2–3 weeks: young stollen is bread; aged stollen is Christmas.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

- Applied thin and even over every surface that will show, with no bare patches and no ridges or brush lines standing in it.
- Nothing pooled: no wash run down into the seams, collected in the corners, or welded to the tray around the base.
- It has not glued shut what needs to move: layers, scores, and cut edges are still free to open in the heat.
- Baked, the finish is even and glossy across the whole piece and deep gold rather than patchy, with no darker bands where the wash sat heavy.
- The shine is on the outside only: nothing inside the piece tastes of egg.
Where it goes wrong The wash went on heavy and ran into the scores and down to the tray, so the piece baked sealed along its seams, browned unevenly, and carries dark rubbery ridges where the egg collected.

- Fully submerged with room to swell: the level is well above everything at the start and still above it at the end.
- Given the full time, and judged by what is in the bowl rather than by the hours on the clock.
- Tested at the CENTRE of the largest piece, cut or pressed. Anything with a hard dry core will still have one after cooking, because the outside softens first and stops the water getting further in.
- The soaking water was dealt with on purpose: kept because it holds flavour, or thrown away because it holds what should not be eaten, but never simply left undecided.
- Drained before it is used, so the dish does not silently gain all the water that came with it.
Where it goes wrong Too little water, or too little time. The pieces swell until they are packed tight against each other and the ones in the middle never fully take up water; they will not soften later in the dish either, so the finished plate has hard pieces scattered through it.
