Ingredients

  • 60ml cold chocolate syrup (Fox's U-bet, traditionally)
  • 120ml very cold whole milk
  • Cold seltzer from a pressurized siphon

Method

  1. Pour the syrup into a tall chilled glass.
  2. Add the cold milk and stir briefly to combine.
  3. Hold a spoon at an angle in the glass and spray the seltzer hard against it.
  4. The foam should rise into a white head an inch tall over dark liquid.
  5. Stir once and drink immediately: an egg cream will not wait.
