Ingredients

  • 1 whole tilapia, snapper or pompano (~800g), scored, salted, and fried WHOLE in hot oil until the skin crisps and the tail goes glassy
  • The sweet-sour: 100ml cane vinegar + 3 tbsp sugar + 2 tbsp soy + 150ml water, simmered
  • Ginger in fine matchsticks, generous; 1 onion in petals; 1 red pepper + 1 carrot in ribbons
  • 1 tbsp cornstarch slurry to gloss; scallions
  • Rice, and the understanding that the sauce is going on the rice too

Method

  1. Fry the whole fish in 2cm of hot oil, 5–6 min a side, until deeply golden and structurally proud; drain and stage on the platter. 6 min
  2. In a fresh pan: sizzle the ginger, then onion, pepper and carrot 2 min, bright and still snapping. 2 min
  3. Vinegar mixture in; boil 1 min (the boil mellows the vinegar's edge); gloss with the slurry to a pourable sheen. 1 min
  4. Pour the hot sweet-sour and its vegetable ribbons over the crisp fish AT the table: the hiss where sauce meets fried skin is the dish's opening line. Serve immediately: half the fish crisp, half sauce-softened, both correct.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the technique it exercises: checked at the pan, while there is still something to be done about it.

  • Take any three pieces from anywhere in the pile: they match closely enough in every dimension that you would have to measure them to argue otherwise.
  • The cut faces are flat and clean rather than ragged or crushed; leaves and herbs are cut through, not bruised, and the board carries no dark smear where they were.
  • The stated size is the actual size, held against a rule or a known reference rather than called about right.
  • Everything in the pile is the shape that was asked for: no wedges, no half pieces, and no offcuts swept in to avoid waste.
  • They cook evenly, which is the entire point: at the end of cooking nothing is still raw and nothing has collapsed.

Where it goes wrong The knife was dull, or the vegetable was never squared off first, so the pieces vary: the small ones are mush by the time the large ones are cooked, and the dish has two textures where it wanted one.
