Ingredients

  • 1 chicken, spatchcocked flat (backbone out, pressed with authority)
  • Piri-piri marinade: 6–10 African bird's eye chilies, 6 garlic cloves, 1 tbsp paprika
  • 100ml olive oil, 60ml lemon juice, 2 tbsp red wine vinegar, bay, oregano, salt
  • Extra sauce reserved BEFORE the raw chicken touches any of it
  • Fries and a tomato-onion salad, churrasqueira style

Method

  1. Blitz the marinade; reserve a third for basting and the table.
  2. Slash the chicken to the bone; massage the rest in; marinate 4 h to overnight. 240 min
  3. Grill over medium coals (or roast 220°C), skin-side up first, turning every 10 min, ~40 min, basting with the reserved sauce. 10 min
  4. Rest 10; cut with scissors, churrasqueira style; more sauce over.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

Marinating: acid, salt and time 70 recipes

  • Contact is total: every surface is wetted, and the pieces are not welded into a clump with dry faces where they pressed together.
  • The stated time was kept and kept cold, read against a clock, because this is the one technique where longer is a different result rather than a safer one.
  • It worked at the surface and no further: cut a piece and the marinade’s colour stops a few millimetres in. A protein gone opaque and chalky to the centre before any heat reached it has been cooked by the acid.
  • The texture is still springy and whole, not mushy, mealy, or fraying at the surface when it is lifted.
  • Where the next step browns it, the surface was patted dry first: a wet surface cannot brown, and the marinade’s sugars will scorch before the food colours.

Where it goes wrong It was left well beyond the stated time on the assumption that more is better, so acid and salt worked through the thin edges: those cook to cotton and read grainy while the thick centre tastes of nothing at all.

  • The fire was ready before the food was: coals evenly covered in grey ash with no flames licking through and no raw smoke coming off, and a hot zone and a cooler one both available.
  • The grate was hot and clean when the food landed, and the food released cleanly from it when the time came to turn rather than tearing away.
  • Marks are browned, not burnt: deep colour where the metal touched, with no carbon flaking off and no soot transferred onto the food.
  • The interior reaches its target with a thin gradient, not charred outside and cold within, and not driven through by a flare-up.
  • What comes off the fire smells of fire and food only: no raw wood smoke, no fuel, nothing acrid at the back of the nose.

Where it goes wrong It went on over live flames instead of settled coals, so the outside charred bitter in the flare-ups while the middle stayed cold, and everything on the plate tastes of soot.
