Method
- Warm the beans in their liquid; mash PARTIALLY with a fork or the traditional smash: rubble, not purée; some beans whole, some cream.
- Beat in garlic paste, lemon, cumin and half the oil while hot: the beans drink while warm.
- Taste and push it: ful should be assertively lemony and garlicky; timid ful is porridge.
- Pour into a shallow bowl; flood with olive oil; let everyone build their own bite with the garnishes and torn bread.
