Method
- Yeasted dough (not batter, dough); rise 1 h until puffed. 60 min
- Knead in the soft butter, then fold in the pearl sugar nuggets; divide into 8 balls; rest 15 min. 15 min
- Bake in a medium-hot iron 3–4 min: the pearl sugar melts and caramelizes into glassy pockets and a lacquered shell. 4 min
- Cool 2 min: the caramel is molten jewelry. Eat warm from the hand, street-corner style; no plate, no fork, no improvements. 2 min
How to tell it is going right
This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

- Nothing is stirred once it is boiling, and any crystals clinging to the side of the pan are brushed down rather than left to fall in.
- Judged by temperature or by a tested stage rather than by time: consecutive stages are a few degrees apart and look identical in the pan.
- Colour is read off the heat and in good light, remembering that sugar keeps darkening after the flame is out.
- Stopped decisively at the point wanted: off the heat and into the next liquid or onto a cold surface, rather than left to coast in a hot pan.
- The result is clear and smooth rather than grainy, cloudy, or seized into a solid mass.
Where it goes wrong It was stirred after coming to the boil, or a stray crystal from the side of the pan fell back in. One crystal seeds the whole pan and the syrup turns grainy within seconds, and once sugar has crystallised the only cure is more water and starting the whole thing again.

- Judged on volume against the container rather than on the clock: visibly grown, and grown by roughly the amount the recipe describes.
- The poke test agrees: a floured fingertip pressed a centimetre in leaves a dent that springs back slowly and only part of the way. Straight back means it is not ready; no spring at all means it has gone.
- The surface is domed, smooth, and slightly sheened: not cratered, wrinkled, or collapsed, and not skinned over and dry from proofing uncovered.
- Handled, it feels alive and airy: light for its size, with bubbles visible under the skin.
- It springs in the oven: the piece lifts in the first minutes and the scores open. A shape that does not move at all was proofed past its point before it went in.
Where it goes wrong It was proofed to the clock in a kitchen colder or warmer than the recipe assumed: overproofed, it collapses as the blade touches it and bakes flat and dense with a sour edge; underproofed, it tears at the side and bakes tight.
