- Syrup: 300g sugar, 300ml water, 4 cardamom pods crushed, few saffron threads, 1 tsp rose water
- Ghee or oil for frying at a strictly moderate temperature

Method
- Make the syrup first; keep it warm, not hot: one-string-consistency is not needed; it should stay thin enough to soak.
- Barely knead the dough (kneading = rubber); rest 10 min; roll into small, CRACK-FREE balls with greased palms: cracks become canyons in the fryer. 10 min
- Fry at 140–150°C, low, rolling constantly, 7–8 min to deep even brown; high heat browns the outside and leaves a raw heart. 8 min

- The work changed it: what began shaggy and rough is one smooth, cohesive mass, with nothing raggy hanging off it.
- The surface has gone satin and barely tacky, releasing cleanly from hands and board instead of leaving a trail.
- Worked to the point this dough asks for and no further: springy and elastic where structure is wanted, just brought together where tenderness is.
- Torn or cut open, the inside is uniform: no dry streaks, no unmixed pockets, no core of flour that never met the water.
- After its rest it rolls and shapes without snapping back. A dough that fights the pin needed more rest, not more force.
Where it goes wrong Sticking was fought with flour instead of technique or patience, stroke after stroke, until the dough had taken in far more than the formula asked; it turns tight and dry under the hands, and bakes dense however well everything else goes.

- The pieces match: weighed, or judged against each other rather than by dividing the mass by eye, so that no piece is half again the size of its neighbour.
- Surfaces are smooth and unbroken with no cracks, tears, or dry patches, and the seams are sealed and sitting underneath.
- The shape is defined and it holds while the tray waits: it has not slumped, spread, or relaxed back out of its form.
- Nothing is trapped that should not be: no air pocket where filling should be, no filling breaking through the surface, and no excess flour greying the outside.
- They finish together in the heat: no piece done while another is still raw, which is the only test that the first mark was met.
Where it goes wrong The dough was worked past its point or shaped without a rest, so it fought back: the pieces spring out of shape on the tray and bake tight, uneven, and torn along the surface.
