  • Sweet beans + garbanzos, nata de coco, kaong (palm fruit), macapuno strings
  • Sweetened saba banana + jackfruit strips
  • Leche flan (see the recipe above) + ube halaya (purple yam jam)
  • A mountain of finely shaved ice + 150ml evaporated milk
  • 1 scoop ube ice cream; pinipig (toasted rice crisps) to crown

Method

  1. Layer the sweets and fruits in a tall glass: heaviest at the bottom.
  2. Pack shaved ice to a peak above the rim.
  3. Pour evaporated milk over; crown with flan, ube halaya, ice cream, pinipig.
  4. Serve with a long spoon and one instruction: halo means mix; stir it ALL before eating.
