  • 800ml coconut milk (two cans, full-fat: this dessert is coconut wearing a suit)
  • 80g sugar; pinch of salt
  • 60g cornstarch (the modern standard; pia, Polynesian arrowroot, is the ancestor)
  • 120ml water to slurry the starch
  • A square pan; cut into cubes when set, per luau law

Method

  1. Warm coconut milk with sugar and salt.
  2. Whisk the cornstarch slurry in; cook over medium, whisking constantly, 5–8 min until it thickens to a heavy pudding that holds a trail. 8 min
  3. Pour into the pan; smooth; press film to the surface.
  4. Chill 3 h until firm; cut into neat squares. Serve cold, on ti leaf if you have it, or layer over chocolate in a pie shell for the famous chocolate haupia pie. 180 min
