Method
- Simmer canned chickpeas 15 min with a pinch of baking soda until squashable; a few skins will float off. 15 min
- Blend hot chickpeas with garlic and lemon first.
- Add tahini; stream in ice water until pale, whipped, and pourable.
- Plate in swooshes; flood with olive oil.
