  • 150g good tahini
  • Juice of 1–2 lemons
  • 1 garlic clove
  • Ice water

Method

  1. Simmer canned chickpeas 15 min with a pinch of baking soda until squashable; a few skins will float off. 15 min
  2. Blend hot chickpeas with garlic and lemon first.
  3. Add tahini; stream in ice water until pale, whipped, and pourable.
  4. Plate in swooshes; flood with olive oil.

Where it goes wrong A starchy ingredient met a high-speed blade, so the cells burst and released their starch: what should be light comes out as an elastic glue that lifts off the spoon in one mass.
