- 300g fresh morels, halved and rinsed carefully
- 500g asparagus, trimmed and cut in lengths
- 85g butter
- 2 shallots, minced
- 2 garlic cloves
- 120ml cream
- 2 tbsp thyme
- 1 tbsp lemon juice
- Salt and pepper

Method
- Rinse the morels quickly in cold water to flush the honeycomb, then drain and dry: never soak them.
- Cook the morels in butter over medium-high heat 5 min until they release their water and it cooks away. 5 min
- Add the shallots and garlic and cook 2 min, then the asparagus and cook 4 min until bright and just tender. 2 min
- Add the cream and thyme and simmer 2 min to bind. 2 min
- Finish with lemon and season.

Where it goes wrong Too much went in at once, the pan cooled, and the food released its water: what was meant to brown in three minutes stews for ten and comes out grey, slack and wet.
