Iowa Corn Casserole

Ingredients

  • 6 ears corn, kernels and scraped milk
  • 4 eggs
  • 250ml cream
  • 55g butter, melted
  • 100g cornmeal
  • 2 tbsp flour
  • 2 tbsp sugar
  • 1 tsp salt
  • 150g cheddar, grated
  • 1/2 tsp white pepper

Method

  1. Cut the kernels from the cobs and scrape the cobs for their milk.
  2. Whisk the eggs, cream, melted butter, cornmeal, flour, sugar, salt, and pepper.
  3. Stir in the corn and half the cheddar.
  4. Pour into a buttered dish and top with the remaining cheese.
  5. Bake at 175C for 40-50 min until set and golden. 50 min
