  • 50ml Irish whiskey
  • 150ml strong, fresh, HOT coffee
  • 2 tsp demerara sugar: not optional; it holds the cream up
  • 50ml double cream, lightly whipped to pouring-thick
  • A stemmed, warmed glass

Method

  1. Warm the glass with hot water; empty it.
  2. Coffee and sugar in; stir till dissolved; whiskey in.
  3. Whip cream only until it ribbons, barely thickened.
  4. Pour cream over the back of a warm spoon to float. Do NOT stir. Drink the coffee through the cream.
