Jamaican Oxtail Stew

Ingredients
- 1.5kg oxtail, trimmed, seasoned overnight: salt, pepper, allspice, garlic, ginger, thyme, scallions, a whole scotch bonnet's worth of respect
- 1 tbsp brown sugar + 2 tbsp oil, for the browning, the Jamaican caramel opening
- 2 tbsp soy or browning sauce; 1 onion, 1 carrot; 750ml stock
- 1 can butter beans (broad beans), drained, the required companions, added late
- 'Spinners': small flour-and-water dumplings rolled between palms; rice and peas alongside

Method
- Burn the sugar: heat it in oil until it froths deep mahogany, the caramel base that stains and flavors everything after; sear the oxtail in it in batches.
- Aromatics in; stock to nearly cover; the lowest simmer or a 150°C oven, lid on, 3–3.5 h (a pressure cooker earns its keep here at 50 min). 300 min
- Skim the fat honestly: oxtail is generous. The gravy should reduce to a glossy, sticky, spoon-clinging brown.
- Butter beans and spinners in for the final 20 min. Serve over rice and peas; instruct guests that the bones are meant to be picked up. They will not need telling twice. 20 min
How it should come out
- The gravy is opaque mahogany with a shine, and carries no black specks of carbon from the sugar.
- It hangs off the ladle before it drops and sheets the back of a spoon; a spoon through the surface comes up with gravy, not oil, and no orange fat layer floats on top.
- Taste it: the caramel reads deep and faintly bittersweet under the allspice and thyme, with no acrid catch at the back of the throat, and the salt sits right at the gravy's reduced strength. An overnight cure plus soy plus three hours of reduction is how this pot goes over.
- Meat leaves the bone under light pressure from a spoon but arrives on the plate in pieces rather than as a pile of shreds, and the bones come out clean with marrow soft enough to draw.
- Butter beans are whole and unbroken, and a spinner torn in half shows cooked dough to the middle with no chalky raw flour core.
Where it goes wrong The whole pot tastes of ash, because the sugar was taken past mahogany to black in the first minute. The gravy still looks correct, which is why the mistake usually gets found at the table.
