Ingredients
- 1 chicken, cut in quarters, slashed to the bone
- Jerk paste: 4–6 scotch bonnets, 6 spring onions, thumb of ginger, 6 garlic cloves
- 2 tbsp allspice berries, thyme, cinnamon, nutmeg
- Soy sauce, brown sugar, lime, oil
- Pimento wood or a handful of allspice berries for the coals

Method
- Blitz the paste; massage into the slashes; marinate overnight, no shortcuts here.
- Grill over medium coals, lid down, turning every 10 min, ~40 min total. 10 min
- Throw allspice berries on the coals for the last 10: that smoke is the signature.
- Rest, chop through the bone with a cleaver, serve with rice and peas.
How it should come out
- Skin is burnished dark mahogany with char confined to the slash edges and the raised ridges; the flats read brown, and no soft yellow fat is still sitting under the skin anywhere on the quarter.
- The slashes have opened and stayed open with paste visible sitting in them, and the meat lining each cut is stained the same rust-brown all the way down to the bone, with no pale ring under the surface.
- Thigh joint reads 75C, the drumstick twists free of the socket in one turn, and juice at the bone runs clear.
- The cleaver passes through each bone in a single strike, leaving a clean flat face: no splinters driven into the meat, no piece needing a second blow.
- Taste a piece of meat from inside a slash rather than the skin: it carries allspice and pimento smoke on its own, and nothing on the quarter tastes of scorched sugar or burnt soy.
Where it goes wrong Coals too hot with the lid up, so brown sugar and soy carbonize into a bitter black shell within twenty minutes while the joint is still bloody at the bone; the plate reads scorched and raw at once.
