Method
- Grate the onion on the coarse side of a box grater, then wring it in a cloth until no more juice runs and discard every drop of that juice.
- Knead the mince with the onion pulp, salt, pepper and turmeric for a full 8 to 10 minutes, until the mass turns tacky and hangs from an upturned palm without falling. 10 min
- Chill the mixture for an hour, then with wet hands press it onto flat 2.5 cm skewers in an even 2 cm ribbon, pinching ridges every 3 cm.
- Grill over hot coals with the skewers raised off the bars, turning every 30 seconds and never letting the kebab hang still, until juice beads on the surface and the ridges are browned, 5 to 6 minutes. 6 min
- Baste with the saffron melted into the butter in the last turn, grill the tomatoes alongside until their skins split, and dust with sumac.
