- 2.5kg pork shoulder (butt), skin scored if present
- 1.5 tbsp coarse Hawaiian sea salt (alaea red salt if you can find it, the earth flavor)
- 1 tbsp liquid smoke: the honest imu substitute; no shame, only physics
- Ti leaves or banana leaves for wrapping (foil works, leaves perfume)

Method
- Pierce the pork deeply all over; rub with the salt and liquid smoke.
- Wrap in leaves, then tightly in two layers of foil: you are building a miniature imu (underground oven) on a baking tray.
- Roast at 150°C for 5–6 hours. Do not open it. The package does the work. 360 min
- Shred with forks INTO the collected juices: never drain them; sauté cabbage in a skillet, fold the pork through, and serve over rice.

- The oven was fully up to heat before anything went in, given time beyond the indicator light rather than judged by it.
- Every piece has air around it. Nothing touches its neighbour and nothing is packed to the edge of the tray, because crowded food steams itself in its own moisture and never browns.
- Colour is even across the whole tray, the tray having been turned at least once: no pale row at the back and no dark row at the front.
- It came out BEFORE the target temperature, not at it. Carryover keeps driving the inside up by several degrees after it leaves the oven, and that rise is part of the cooking rather than an error in it.
