- 150g pork cracklings, chopped
- 250g cornmeal
- 60g flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 tsp sugar
- 2 eggs
- 400ml buttermilk
- 3 tbsp bacon fat

Method
- Heat the bacon fat in a cast-iron skillet at 220C until smoking.
- Whisk the cornmeal, flour, baking powder, salt, and sugar.
- Beat in the eggs and buttermilk to a loose batter, then fold in the cracklings.
- Pour the batter into the screaming-hot fat and return to the oven.
- Bake 22-25 min until the top is gold and the edges crisp. Turn out and serve hot. 25 min
