  • 150g pork cracklings, chopped
  • 250g cornmeal
  • 60g flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp sugar
  • 2 eggs
  • 400ml buttermilk
  • 3 tbsp bacon fat

Method

  1. Heat the bacon fat in a cast-iron skillet at 220C until smoking.
  2. Whisk the cornmeal, flour, baking powder, salt, and sugar.
  3. Beat in the eggs and buttermilk to a loose batter, then fold in the cracklings.
  4. Pour the batter into the screaming-hot fat and return to the oven.
  5. Bake 22-25 min until the top is gold and the edges crisp. Turn out and serve hot. 25 min
