Method
- Knead the meat with the warm liquid until sloshy: it will drink it all.
- Roll thick coins, then thin the edges; a ball of filling; pleat 18–24 folds around it and twist a topknot.
- Boil in salted water; when they float belly-up, 3–4 min more. 4 min
- Serve dusted with black pepper. Hold by the knot, bite the side, DRINK the broth, then eat: the doughy knots pile on the plate as your scorecard.
