  • 500g leanest beef (eye of round), impeccably fresh, minced fine by hand or a trusted butcher, twice
  • 4 tbsp niter kibbeh (Ethiopian spiced clarified butter), warmed to liquid
  • 2–3 tsp mitmita (the fiery orange chili-cardamom powder, hotter than berbere)
  • Ayib (fresh crumbly cheese, like dry cottage cheese) and gomen alongside
  • Injera or kocho; korerima pinch

Method

  1. Warm the niter kibbeh gently: it must be liquid but never hot enough to cook.
  2. Fold the raw minced beef with the butter and mitmita until glossy and uniform.
  3. Serve immediately: traditional is tere (fully raw and body-warm), leb leb is lightly warmed in the pan for the cautious.
  4. Plate with cool ayib and gomen: the mild cheese is the fire brigade.
