Method

  1. Soak crumbs in cream 10 min; mix everything gently: overworked meatballs bounce. 10 min
  2. Roll walnut-sized with wet hands; chill 20 min. 20 min
  3. Brown in butter in batches, rolling the pan so they stay spherical; remove.
  4. Roux in the same pan; stock, cream, a whisper of soy for color; balls back to finish in the gravy.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • Taken to the stage the dish named and no further, judged against that colour (pale, blond, or brown to brick), and it got there slowly enough to have coloured evenly.
  • It is smooth and mobile: a paste with no dry pockets of flour and no lumps, loosening as it warms rather than sitting stiff in the pan.
  • The raw-flour smell has gone and been replaced by the toasted, biscuity smell of its stage, with nothing acrid behind it.

Where it goes wrong It was given twenty minutes instead of the hours it needed, so it is firm at the rim and soft at the core: it slumps out of shape as it is portioned, and everything made from it spreads or breaks apart in the pan.
