Method

  1. Fry pork crisp; add doubanjiang and beans, fry until the oil turns red.
  2. Add aromatics, then stock; slide in tofu, simmer 5 min without stirring hard. 5 min
  3. Thicken with slurry in two additions.
  4. Finish with ground Sichuan peppercorn and scallion.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • Held somewhere with a steady temperature it can actually work at, chosen on purpose rather than wherever there happened to be room.
  • There is visible activity before it is called started: bubbles, rise, or movement in the liquid. A ferment showing nothing after its first hours is not slow, it is not going.
  • It smells clean: sour, yeasty, or alcoholic, with nothing putrid, and with nothing fuzzy or coloured growing where air meets it.
  • Everything is under the liquid or under a cover, as the method requires: nothing solid left sitting dry in the air to spoil while the rest works.
  • Judged by taste and behaviour and then STOPPED: chilled, baked, or refrigerated at the point wanted, rather than left running because the stated hours had not elapsed.

Where it goes wrong It was run on the clock in a kitchen colder or warmer than the recipe assumed. Fermentation is a rate and not a duration, so the same number of hours gives an under-developed ferment in a cold room and a slack, over-soured one in a warm one, and only tasting it would have said which.

Salted water & the float test 188 recipes

  • The water was salted before anything went in, and tasting it confirms it: seasoned on the tongue, with the salt dissolved rather than sitting on the pot floor.
  • There is enough water, hot enough, that the pot returns to its boil quickly after the food goes in and never stops moving.
  • Where the dish uses the float as its signal, the signal is obeyed: the pieces rise and they come out then, not several minutes later once something else was finished.
  • Nothing is stuck to the bottom of the pot or welded to itself, and the water has not thickened into a cloudy sludge.
  • Drained on a bite rather than on the clock: resistance at the centre, with no chalky raw core.

Where it goes wrong The pot was too small and the water unsalted, so it never recovered its boil: the food sat in slack water, went gummy at the surface, and comes out bland in a way that no sauce afterwards can fix.
