Memphis Dry-Rub Ribs

Ingredients
- 2 racks pork spare ribs or loin backs, membrane peeled off the bone side
- The rub: 3 tbsp paprika, 2 tbsp brown sugar, 1 tbsp each garlic powder, onion powder, black pepper, 2 tsp cayenne, 1 tbsp celery salt, 1 tsp dry mustard, oregano
- Mop: 100ml cider vinegar + 100ml water + 1 tbsp of the rub
- A smoker or kettle grill set up indirect at 120°C, hickory chunks

Method
- Rub the racks generously the night before; refrigerate uncovered.
- Smoke indirect at 120°C, meat side up, hickory smoke thin and blue, 4.5–5.5 h. 300 min
- Mop lightly every 45 min after the second hour, moisture, not sauce. 45 min
- They are done when the rack bends and cracks at the surface when lifted with tongs. Dust with a final pinch of fresh rub (the Rendezvous signature) and serve dry, proudly.
How it should come out
- The rack is matte and dry, brick red to mahogany; a fingertip drawn across it lifts spice dust rather than glaze, and nothing tacky transfers to the board.
- Lifted with tongs a third of the way along, the rack bends toward 90 degrees and the surface cracks open between the bones without the meat tearing free.
- Turn the rack over: no papery membrane is left anywhere on the bone side, and the fat between the bones has rendered soft rather than sitting in rubbery seams.
- A bite pulls meat cleanly away leaving a clean bite mark, and the bone stays in the rack; bones that slide out grey and bare are past the standard.
- The final dusting reads as raw spice on the lips, paprika and celery salt distinct from the cooked bark beneath, and no sauce has touched the meat.
Where it goes wrong Mopped like a sauce rather than a wetting, heavy and often, so the vinegar dissolves the rub into a red slurry that never sets: the rack comes off streaked and sticky with most of the bark in the drip pan.
