- 800 g lamb shoulder, well chilled, in 2 cm dice
- 200 g lamb tail or kidney fat, well chilled, in 2 cm dice
- 18 g fine sea salt
- 30 g harissa
- 12 g sweet paprika
- 6 g hot paprika
- 8 g ground cumin
- 6 g ground coriander
- 4 g ground fennel
- 3 g ground caraway
- 3 g ground cinnamon
- 4 garlic cloves, crushed to a paste
- 60 ml ice water
- 3 metres sheep casing, 22 mm, rinsed and soaked

Method
- Toss the diced meat and fat with the salt, garlic and all the ground spices, spread it on a tray and freeze it for 30 minutes, until the fat is hard and the meat crunches at the edges. 30 min
- Mince through a 4.5 mm plate into a cold bowl; if the fat smears instead of cutting cleanly, stop and re-chill everything, mincer parts included.
- Beat in the ice water and harissa for about a minute, until the mix turns tacky and clings to an upturned hand.
- Stuff into the casing without packing it tight, twist into 15 cm links and hang them in the fridge overnight so the colour deepens and the casing dries. There is no cure in these, and the hang has already spent a day of their life: grill within two days of stuffing, or freeze the links once the hang is done.
- Grill over medium coals for 8 minutes to 10 minutes, turning often, until the centre reads 71C (160F); fierce heat splits the casing and the fat you worked to keep runs into the fire. 8 min
