Miso-Glazed Black Cod

Ingredients

  • 4 black cod (sablefish) fillets, 180g each, skin on: the fish's buttery fat is why this dish became famous
  • The saikyo marinade: 150g white miso + 4 tbsp mirin + 4 tbsp sake + 3 tbsp sugar, whisked over low heat and COOLED
  • 48–72 HOURS of marinating: the number is the recipe
  • A broiler or 230°C oven; the sugar wants to burn, so watch like a hawk in the final minutes
  • Pickled ginger shoot or simple steamed rice and greens

Method

  1. Whisk the marinade warm until the sugar dissolves; cool completely.
  2. Bury the fillets in it; refrigerate 2–3 days, turning once a day: the miso cures, seasons and sweetens to the bone.
  3. Wipe (don't rinse) the excess; broil on oiled foil 8–10 min until the surface caramelizes to lacquered mahogany with charred corners and the flesh flakes in large petals. 10 min
  4. Rest 2 min; serve with rice. The fish should taste seasoned throughout, not sauced; that is the 72 hours talking. 2 min

How it should come out

  • Lacquered mahogany across the surface with genuine black at the corners and the raised edges; a flat even gold means it never sat close enough to the element, or the cure was too short to give the sugars anything to work with.
  • A thin skin of glaze, wiped and not rinsed: no clods of scraped miso baked hard onto the fillet, and equally no washed-looking bare patches that took no colour at all.
  • The flesh breaks into large petals a centimetre thick under the edge of a spoon, the fillet lying flat rather than buckled, with no white curd of albumin squeezed out along the seams.
  • White and glistening to the centre with the fat visibly running, and no dry chalky seam sitting under the crust.
  • A bite taken from the middle, with no glaze on it, still tastes salted and faintly sweet: an unseasoned centre means the fish went in at 24 hours, not 48 to 72.

Where it goes wrong Black before it is cooked, because the excess marinade was left on and the fillet sat too close to the element: bitter carbon on top, cool untransformed flesh under it.
