Ingredients
- 800g raw sweet potatoes, grated
- 120ml cane syrup or molasses
- 100g brown sugar
- 2 eggs
- 250ml milk
- 55g butter, melted
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- Zest of 1 orange

Method
- Grate the raw sweet potatoes on the coarse side of a box grater.
- Whisk the cane syrup, brown sugar, eggs, milk, melted butter, spices, salt, and orange zest.
- Stir in the grated sweet potato.
- Pour into a buttered dish and bake at 175C for 55-65 min, stirring once at the halfway mark so it cooks evenly. 65 min
- The finished pone is dense, dark, and set. Serve warm.
